I couldn't find mushroom sauce, so I substituted fish sauce, and boy was this good! I crave it every weekend, & so far, I've made it 3 times. I also changed how to prepare the eggplant. Instead of frying in oil & then putting in water, I simply air fry it. It's faster & less greasy. I have also experimented by using cabbage instead of bok choy, & tried different noodles, and it always came out EXCELLENT!
