Gingery Chocolate Truffles


Yes, it's the latest in my series of amazing and easy vegan chocolate truffles! You can also check out the other varieties:

What is next? Super gingery chocolate truffles. You can adjust the gingery-ness according to taste preference, I personally love them super gingery and can highly recommend it.

Gingery Chocolate Truffles

Ingredients:
250g of dark chocolate, coarsely chopped
¼ cup of soy milk
6-7 pieces of glace ginger, chopped finely (you could also use crystalised)
1-2 pinches ground ginger (depends how gingery you want it, add more or less to taste)
Cocoa powder for dusting (optional: to make it even more gingery add a pinch of ground ginger to your rolling cocoa)

How to make:
1. Heat the soymilk in a small saucepan until small bubbles appear and steam rises off the pan.
2. Take off heat, add the chocolate and ground ginger and stir vigorously until the chocolate has melted and the ganache is smooth.
3. Stir through the chopped glace ginger. Place in a container and leave to chill in the fridge for 8 hours or overnight.
4. Remove ganache from the fridge. Place about ¼ cup of cocoa powder on a small bowl, and using a teaspoon or a melon baller (these are perfect!), place a spoonful of the ganache into the cocoa, tossing it in the cocoa until covered. Then dust your palms with some of the cocoa and roll the ganache piece into a ball, and place on a serving plate/whatever plate you like. Repeat until you run out of ganache.

Note: If you're doing it on a warm day they you're going to want to keep these babies in the fridge as much as possible!

Makes about 30 truffles (depends how big you roll them)

Cracked Pepper Chocolate Truffles


You may have noticed that I love chocolate truffles! Why do I love chocolate truffles? Let me count the ways...

1) They're chocolate
2) They're quick and easy to make
3) They're rich, which means you can be satisfied with just one or two or you can totally treat yourself and eat the whole plate, it's up to you!
4) They can be easily infused with any other flavour you like!
5) They're chocolate
6) They're easy

So many wonderful reasons!

Ever since I made the Croatian Cracked Pepper Biscuits I have been meaning to try and incorporate more cracked black pepper into my desserts! Well, it took me about 9 months (it was like a baby gestating...) but I have finally gotten around to it and made these fantastic cracked black pepper chocolate truffles. In another 9 months or so maybe I'll come up with another great cracked pepper sweet dish, but in the mean time give these babies a go (note: not actual babies).

1/2 tsp freshly cracked black pepper
Cocoa powder for dusting

How to make:
1. Heat the soymilk in a small saucepan until small bubbles appear and steam rises off the pan.
2. Take off heat, add the pepper and chocolate and stir vigorously until the chocolate has melted and the ganache is smooth.
3. Place in a container and leave to chill in the fridge for 8 hours or overnight.
4. Time to roll some truffles!

Jalapeño Chocolate Truffles


Truffles are a deliciously simple way to add the flavours of anything you love to chocolate, and that is pretty much a recipe for success. Still unsure? Check out some of our other flavours of truffles -  including smoked paprika, tahini and sesame and strawberry gum (an unique Australian spice). This post is part of the Eat the Alphabet Blog Hop - which is featuring the letters I and J this month. I and J are particularly difficult letters, I think. I could only think of 4 things: Iceberg Lettuce, Jerusalem Artichokes, Jackfruit and Jalapeños. I wish I could have used Jackfruit but sadly I don't live in South East Asia where it is readily available :( I also would have loved to try something new with Jerusalem Artichokes, but I couldn't find them anywhere so I assume they aren't a winter vegetable. So - Jalapeños it is!

I love the combination of chilli and chocolate, however, I don't always love how it's done. Often chilli chocolate just involves adding some chilli powder to anything chocolate. This ok, but gives the chocolate a bit of a powdery aftertaste and the chilli tastes more like that "stale-spice-jar-chilli-powder-that-has-been-sitting-in-my-cupcoard-for-years" type of chilli. So, I wanted to infuse a spicy fresh chilli flavour which wouldn't only be hot in your mouth but actually showcase the unique flavour of jalapeño chillis.

They were perfect- the first flavour you get is the rich and creamy ganache truffle followed by a fresh heat that spreads through your mouth. So neither of the flavours dominate over the other and you get to appreciate the chocolate and then the fresh chilli hit - I couldn't have asked for them to work out better. If you are a chilli lover, then you're a fool not to try these!


Ingredients:
250g of dark chocolate, coarsely chopped
¼ cup of soy milk
1 fresh jalapeño chilli
Cocoa powder for dusting

How to make:
1. Roughly chop the jalapeño chilli and soak it in the milk for about 15 minute or so (you can shop your chocolate up while you are waiting). Strain the milk and discard the pieces of jalapeño.
2. Heat the soymilk in a small saucepan until small bubbles appear and steam rises off the pan.
3. Take off heat, add chocolate and stir vigorously until the chocolate has melted and the ganache is smooth.
4. Place in a container and leave to chill in the fridge for 8 hours or overnight.
5. Time to roll some truffles!

Vegan Truffles in 3 Flavours: Tahini Temptress, Paprika Paradise and Strawberry Gum Seduction


This is our second contribution to the Death By Chocolate Blog Hop - as the fabulous hostesses were very kind and allowed that we could have a special consideration for this hop and post one recipe each (since we have 2 authors on this blog). This was a huge relief really because chocolate is probably my favourite thing ever and if I had had to fight K-bobo for it things would have got messy (in a melted chocolate everywhere kind of way - kind of like they did anyway.... as you'll see from pics below).

K-bobo has already contributed the incredible Black Forest Shots to the hop, so I thought I would go with a more traditional way to die consuming chocolate - decadent creamy truffles. There really is no end to the flavour combinations you can create with truffles, and they take little effort whilst looking and tasting mighty fine. K-bobo came up with the frankly genius idea of smoky paprika truffles, and I just couldn’t resist trying my new strawberry gum (the ground leaves of a eucalyptus tree with an amazing strawberry passionfruit flavour) and combining two of my favourite things: tahini and chocolate. And the result? These truffles pretty much Blew.My.Mind.

Strawberry gum might seem like a bit of an obscure ingredient, but it can be bought from some fruit and vegie shops or quite easily online here at Herbie's Spices. Trust me it is well worth getting - the flavour and the aroma are incredible

Ingredients:

250g of dark chocolate, coarsely chopped
¼ cup of soy milk
¾ tsp of ground strawberry gum
¾ tsp of smoky paprika
2 Tbsp of unhulled tahini
¼ cup of toasted sesame seeds, for coating
Cocoa powder and sweet paprika for dusting.

How to make:

1. Heat the soymilk in a small saucepan until small bubbles appear and steam rises off the pan.
2. Take off heat, add chocolate and stir vigorously until the chocolate has melted and the ganache is smooth.
3. Divide the ganache into three small containers/bowls or as I used, ramekins:
4. Add the smoky paprika to one of the containers and stir until combined. Add the strawberry gum to the second container and stir until combined. Leave the third as it is, cover the containers and chill in the fridge for eight hours or overnight.
5. Time to roll some truffles!



Strawberry Gum Seductress:
Remove strawberry gum ganache from the fridge. Place about ¼ cup of cocoa powder on a small bowl, and using a teaspoon or a melon baller (these are perfect!), place a spoonful of the ganache into the cocoa, tossing it in the cocoa until covered. Then dust your palms with some of the cocoa and roll the ganache piece into a ball, and place on a serving plate/whatever plate you like. Repeat until you run out of ganache.

Paprika Paradise:
follow the instructions above, adding 1 tsp of smoky paprika to the dusting cocoa. When the smoky paprika truffles are rolled, sprinkle the tops with some sweet paprika for colour and added flavour.

Tahini Temptress:
Now we get to the double sesame amazingness! K-bobo perfected the technique for these, so I’ve included step by step photos of her making them like a champion. First, toast your sesame seeds in a small pan, stirring them over a low heat until browned, and transfer them to a small bowl. Allow to cool completely. Then dust your palms with a little cocoa and take a spoonful of the mixture, this time without dusting it in cocoa. With your fingers, mould the spoonful of mixture into a pancake shape, like this:

Then get a pea sized amount of tahini and place it in the middle, like this:


Now carefully fold in the edges of the ganache until it is sealed, and very gently roll into a ball with your palms (your palms will get pretty chocolaty with these!). Lastly, place the rolled truffle in the bowl with the toasted sesame seeds and gently roll until covered in seeds. By the end of making of making the double sesame truffles, your hands should look like this (cue chocolaty jazz hands!):


8. Enjoy your truffles!
